This week’s Cocktail of the Week is the ‘Prickly Pear Cocktail’ from The Xara Palace. It’s been designed to promote locally sourced products and to highlight the local prickly pear. The ‘Prickly Pear Cocktail’ is served at the hotel and is available throughout the bar areas and the terrace.
The prickly pear tree is often planted around fields in Malta and Gozo as a windbreak and for its fruit. For cooking it is used for jams, jellies, and liqueurs. In Malta, some enterprises produce liquor “Baytril” (Bajtra), from prickly pears. The harvest season is from July to October.
Ingredients
- 50ml Gin
- 25ml Bajtra
- 5ml Orange Liquor
- 5ml Fresh Lime juice
- 50ml Egg White
- 50ml Cranberry Juice
Method
Place in a chilled shaker, shake well and serve in a chilled coupette glass and garnish with locally sourced edible flower petals.
