This deliciously fruity recipe from In the Welsh Wind Distillery features elements of the famous Ramos Gin Fizz: it’s a well-shaken, creamy cocktail with a sturdy head. However, the mixing process is a little different. The Cranberry Fizz involves a two-stage shaking process – first “dry” (without ice) to amalgamate the ingredients, then “wet” (you guessed it – with ice) to chill it.
Cranberry Fizz
Ingredients
- 40ml Cardiff Dry Gin
- 15ml St Germain Elderflower
- 40ml cranberry juice
- 15ml lemon juice
- 15ml double cream
- 1 egg white
- Soda water
- Rosemary, to garnish
Method
Add all the ingredients (excluding the soda water) to a shaker and dry shake (without ice). Add some ice to the shaker and shake again to chill. Strain into a tall glass until it’s two-thirds full and wait one minute. Slowly pour cold soda water straight from the fridge until the foam has past above the rim. Add a straw and garnish with a rosemary sprig.
