Throughout Dry January, we’re using our Cocktail of the Week feature to showcase some great non-alcoholic serves – whether you’re taking part in the sobriety campaign, or just want to try something new this weekend. This time, we’ve chosen a recipe from England’s Salcombe Distilling Co and its non-alcoholic spirits range, New London Light. Made using the range’s inaugural release, First Light, the Equinox is a refreshing cocktail which Salcombe Distilling Co says will introduce drinkers to a “new world of sophisticated flavour without alcohol”.
Equinox
Ingredients
- 50ml New London Light ‘First Light’
- 25ml cloudy apply juice
- 25ml aquafaba
- 20ml ginger syrup
- 15ml lime juice
- Green apple
Method
Add all the ingredients to a cocktail shaker, except the green apple, and shake vigorously without ice for 10 seconds. Add plenty of ice to the shaker and shake for a further 10 seconds. Double strain the mixture into a chilled Champagne coupe and garnish with thin slices of green apple on the side of the glass.
