Nose
An extremely dry gin with lots of juniper and angelica, but with a largely restrained citrus character.

Palate
An array of softer herbal and leafy notes such as sage and a slight grassiness with a touch of florality. The flavour moves onto sweet spice reminiscent of a cinnamon loaf. The profile gradually becomes more classic.

Finish
Slightly tannic tea notes, but, overall, it is dry with just a pinprick of heat.

Comments
With its dryness and gentle spiciness, I think this gin would make a handsome Pink Gin.

Bethany Whymark

Nose
Creamy and nutty. Parsley, lemon, oily juniper and a sweet-spice top note, like cinnamon sugar.

Palate
This is more classic, with bolder juniper and earthy root notes coming forward with slightly jammy citrus tang.

Finish
Medium-length and nicely mouth-filling. Clean and resinous with slightly bitter juniper and lemon notes.

Comments
The bones of a really nice gin – I just would have liked a bit more complexity on the palate. A nice choice for a Collins.
