Cocktail of the week: The Alchemist’s Bananagroni

Bananagroni from The Alchemist

This twist on the classic comes from cocktail bar The Alchemist, and is featured in its new book The Alchemist Cocktail Book – Master of the Dark Arts of Mixology. Swapping the traditional Campari for Aperol brings extra sweetness, while a homemade banana vermouth supplies a fruity punch (if you can’t get hold of a banana vermouth, you could substitute in some banana liqueur).

Bananagroni

Ingredients

  • 15ml gin
  • 15m Aperol
  • 30ml banana vermouth 
  • Grapefruit zest twist
  • Dehydrated banana slice, to garnish

Method

Fill a rocks glass with ice, then add the gin, Aperol and banana vermouth. Stir for a few seconds. Squeeze the grapefruit zest twist over the glass to release its oils and aroma, then discard. Serve, garnished with a dehydrated banana slice.
