Please welcome the Southside, a foolproof combination of gin, citrus and mint. This version uses Aviation American Gin, whose contemporary flavour profile really shines through in this stripped-back serve.

Ingredients
- 40ml Aviation American Gin
- 15ml freshly squeezed lemon juice
- 15ml simple syrup
- 6 mint leaves
Method
In a cocktail shaker, muddle the mint leaves. Add the gin, lemon juice and simple syrup to the shaker, fill with ice and shake vigorously. Strain into a cocktail glass and garnish with a mint sprig.
