Devon distiller Salcombe Gin has unveiled the latest gin in its experimental Voyager series today. ‘Daring’ was developed with celebrated chef Paul Ainsworth and is based on his signature Cornish oyster dish, A Tale of Porthilly. To celebrate the launch of this exciting limited-edition gin, we’re featuring it in our cocktail of the week! The Who Dares Wins is designed as a take on a Ramos Gin Fizz, with sharp citrus flavours to cut through Daring’s buttery character.

Who Dares Wins
Ingredients
- 50ml Salcombe Gin Voyager Series ‘Daring’
- 15ml lime juice
- 15ml yuzu juice
- 25ml star anise syrup*
- 25ml cloudy apple juice
- 12.5ml buttermilk*
- 12.5ml single cream*
- 25ml egg white*
- Soda, to top up
- Apple blossom, to garnish
Method
Chill a highball glass in the freezer. Place all the ingredients except the soda into a Boston shaker and dry shake (without ice) for 15 seconds. Add ice to the shaker and shake vigorously for a further 15 seconds. Strain the mixture through a Hawthorne strainer into the chilled highball glass and garnish with apple blossom.
* For a dairy free alternative, use 25ml oat milk and half a pipette of foaming bitters instead of the buttermilk, single cream and egg white.
