For this week’s cocktail, we’ve gone for a lesser-known classic: the Martinez. A relative of both the Martini and the whisky-based Manhattan, this cocktail still holds a firm place in the hearts of some cocktail lovers. This version is made with Opihr Spiced Gin and a vermouth infused with Assam tea, which enhances the gin’s earthy cubeb berry notes.

- 30ml Opihr Spiced Gin
- 20ml white vermouth infused with Assam
- 4 dashes aromatic bitters
- 5ml sugar syrup
To make the infused vermouth, combine one bottle of white vermouth with three teaspoons of Assam loose leaf tea, leave to infuse for one hour, then strain.
To build the cocktail, combine the ingredients in a rocks glass over ice and garnish with cubeb berries.
