For this cocktail of the week, we’re bringing you another simple pleasure courtesy of Bombay Sapphire: the Break Smash. This three-ingredient wonder combines the distillery’s classic gin with green tea (it may be in a cordial, but it’s still good for you, right?…) and soda water. As well as being a little green in colour, the cocktail speaks to the ever-more ‘green’ nature of Bombay Sapphire and its efforts to make its gin production more sustainable.

Ingredients
- 40ml Bombay Sapphire Gin
- 25ml green tea cordial
- 75ml soda water

To make the green tea syrup, put 25g green tea in a large jug and pour over 500ml hot water. Leave to infuse overnight, then strain, add 500g caster sugar and a squeeze of lime juice.
To build the cocktail, put all the ingredients into a cocktail shaker, shake and fine strain into a highball glass or similar. Garnish with edible flowers and a sprig of mint.
