This week – in a month where quite a lot seems to have been crammed into the first half, and on a day renowned for its disastrous potential – we’re taking things back to basics with a super-simple cocktail. This one was created by the bartenders at the Atlas Bar in Singapore in collaboration with Seven Crofts Gin. It’s the flagship juniper spirit of the Highland Liquor Co., based in the fishing village of Ullapool in Scotland.

- 50ml Seven Crofts Gin
- 25ml lemon juice
- 20ml simple syrup
- 1 dash Angostura Bitters
- Cucumber and mint, plus extra to garnish
Combine ingredients in a cocktail shaker, shake with cucumber and mint and serve on the rocks. Garnish with more cucumber and mint.
