To celebrate Apple Day, which took place this week in the UK (21 October), we’ve got an autumnal apple delight for you with a little help from One Gin. The fruit has special significance for the brand, as russet apples are a key botanical in its Sage & Apple Gin. This month, One Gin (which donates 10 per cent of its profits to clean water projects) is celebrating all things apples, including sharing apple-inspired cocktails like this long and luscious Cobbler.

One Gin Cobbler

Ingredients

  • 30ml One Sage Gin
  • 1/4 fresh apple, cubed
  • 4 sprigs lemon thyme, plus more to garnish
  • 30ml white port
  • 15ml elderflower cordial
  • 20ml lemon juice
  • 10ml Earl Grey tea syrup
  • 2 orange slices
  • 2 lemon slices
  • 80ml ginger ale

Method

In a cocktail shaker, crush up the apple with four sprigs of the lemon thyme (regular thyme will do if you can’t find lemon thyme). Add the remaining ingredients, except the ginger ale, shake well with fresh ice. Strain into a highball glass and top with ginger ale. Garnish with thyme sprigs.
