Nose
The floral sweetness of crystallised violets, candied citrus peel
and pine jelly. 

Palate
A very delicate, classic character that gradually builds on the palate, bringing in classic gin flavours of juniper, citrus and spice. A cleanly distilled spirit with minimal burn. 

Finish
Coriander, with a little ginger root. 

Comments
A gentle gin with a pleasant crispness and good versatility, although perhaps too dainty to stand up to strong mixing with fruit juices.

Phoebe Calver

Nose
Quite heavily floral from the off – not too perfumed though, think natural heather from the moors. 

Palate
The heather character moves into gorse and a touch of sage from the kitchen garden. This herbal edge is cut through by a citrus note that I’m going to call out as grapefruit thanks to the hint of a bitter edge. 

Finish
Angelica makes an appearance before the gin burns out. 

Comments
A very sweet gin; something I’d enjoy in a tall glass with a splash of soda water and sprig of rosemary… as you do.
