This might be one of the more unusual, and exciting, cocktails we’ve featured so far; among the ingredients are parsley, peas, and olive oil, and part of the process involves creating what the team at Lyaness describe as a ‘citrusy, zesty, green zing’ of a pea cordial, to be mixed with parsley gin. Oxley Parsley Spritz
Ingredients
- 100ml Oxley gin
- 5ml lemon juice
- 30g parsley (and a sprig to garnish)
- 30ml olive oil
- 100g frozen peas
- 100ml water
- 55g sugar
- 15g honey
- Pinch of bicarbonate of soda
- Soda water
Method
To create the Oxley parsley gin:
Blanch the parsley and place in ice cold water. Mix the olive oil, parsley and Oxley gin in a blender and freeze overnight. The following day, strain the frozen mixture to remove any oil and solids.
To create the pea cordial:
Blend the frozen peas, water, 50g of the sugar, and honey, and strain through a cloth. Add a pinch of bicarbonate of soda at this point, to bring out the colour of the mixture (optional).
Finally, combine 35ml of Oxley parsley gin with 40ml of pea cordial, the final 5g of sugar, and the lemon juice. Stir, top with soda and garnish with a sprig of parsley.
