Tom’s Tipple

Thomas Dakin describes this concoction as ‘the perfect tipple after a long day distilling’; we think one of these makes the perfect end to any day! Citrus is beautifully balanced with notes of coriander and a hit of pepper, and gives you a cocktail that’s delicious, distinctive, and light. Extremely sippable and refreshing, we can’t wait to make one of these later on…

Ingredients

  • 35ml Thomas Dakin Gin
  • 1/2 tsp fresh lemon juice
  • 2 tsp caster sugar
  • 1/4 tsp ground pepper
  • 8-10 fresh coriander leaves
  • Tonic water

Method

Add the lemon, gin and sugar to a Collins-style glass and stir gently until dissolved. Add all other ingredients to the glass with ice and stir for 30 seconds. Fill the glass to the top with ice if required, top up with tonic, garnish with a lemon segment and grind some black pepper on top.
