This week’s cocktail is packed with fresh fruit and summer flavours, perfect for fans of a classic Pimm’s. The fresh ginger and citrus from the lemon give it a perfectly rounded flavour palette that’s refreshing, sweet and tempting, and the second glass will be just as good as the first. This is also one that can be batch-made easily — perfect for those of you on lockdown with others.
Greenall’s Forest Fruit Cup
Ingredients
- 50ml Greenall’s Wild Berry Gin
- 25ml fresh lemon juice
- 10ml Cointreau
- 15ml simple syrup
- 1 thin slice ginger
- 150ml ginger beer
- Extra slices of ginger and some lemon, mint, cucumber and mixed fruit (raspberries, blackberries, strawberries), to garnish
Method
Gently muddle the ginger slice in a large highball, hurricane or sling glass, pour over the other ingredients and stir. Garnish with ginger slices, lemon, mint, cucumber and mixed fruit.
To turn this drink into a sharing cocktail, throw all the garnish and ginger into a large jug and squash slightly. Add the liquid ingredients and ice and stir well. Serve over more ice in tumblers.
