Cocktail of the week

Spring is continuing its advance and changing our landscape, with flowers blooming and leaves returning to the trees. This week’s cocktail is in-keeping with this spirit of green shoots, new life and the lusciousness of nature.

This King of the Hill recipe, courtesy of Slingsby Gin, combines beautifully fresh spring flavours of gooseberry and elderflower and when mixed creates a juicy, refreshing drink that would be a perfect fit for a warm spring or early summer’s day. It’s inspired by lush green mountains and hillsides, with the addition of tropical fruits transporting you to warmer climes while you sip. King of the Hill

Ingredients

  • 50ml Slingsby Gooseberry Gin
  • 50ml cloudy apple juice
  • 20ml elderflower cordial
  • 15ml lemon juice
  • Half a muddled kiwi

Method

Muddle the kiwi in the base of a cocktail shaker. Add all other ingredients and shake with ice. Strain into a highball glass with crushed ice and garnish with cucumber balls and a kiwi slice.
