David T Smith – 8.6

Nose: Lovely, rich, and fruity with hints of cherry and peach. Sweet and inviting.

Palate: Great texture – thick and a little sweet. Big, bold juniper notes followed by citrus and pine blossom. Great balance between the botanicals and barrel. 

Finish: A little honey along with spice and a little pepper. A long, lingering finish of cedar and citrus follows.

Comments: An intense and juniper-forward aged gin, that would be simply splendid in a Negroni.

Felicity Murray – 7.8

Nose: Shy at first, but opens up with wafts of sweet vanilla, bread and honey, chocolate, tangerines, cloves and baking spices. 

Palate: Hot and spicy, rich and buttery with strong wood imparted flavours at first, then juniper and citrus emerges to add complexity and balance.

Finish: Creamy smooth with vanilla, lime and warm spices. Medium length.

Comments: The oak influence makes it a good replacement for rye whisky or Bourbon in Boulevardiers or Old Fashioneds.
