Nose: Green pine, sappy and resinous with leafy mint and peppermint candy canes.

Palate: Sweetness to start with a gradual building of pine and cedar, before spruce needles and lemon zest. Leafy notes continue with fresh spearmint.

Finish: Peppery notes of grains of paradise and cubeb berries, and a long, lingering and tingling menthol finish.

Comments: An intense spirit with bold juniper and plenty of mint – a great match for red vermouth.

Nose: Musty, dark and damp forests, earthy and herbal. Basil and thyme notes interact with angelica, liquorice, and a touch of honeysuckle, marigold and violet.

Palate: Hugely spicy, warming and oily, with notes of orris root, cassia bark and angelica.

Finish: A long, buttery and herbal finish with a touch of vanilla and a peppery edge.

Comments: This could work well in a cocktail adding a warm spicy hit. Try with a long slice of cool cucumber or a sprig of pine needles and maybe a cucumber flavoured tonic.
