To celebrate the release of its Edinburgh Gin 1670, the brand behind Seaside Gin and Cannonball Navy Strength have suggested this twist on a classic –

A crisp Martini that balances peppery spice with sweet anise notes from fennel.
• 50ml Edinburgh Gin 1670
• 15ml dry Vermouth
• dash of lemon bitters
• fresh fennel
Pour the gin, vermouth and bitters into an ice filled cocktail shaker. Shake for 15 seconds before pouring into a chilled Martini glass. Garnish with a fresh fennel frond.
