A lesser known cocktail along the lines of the Army and Navy called the Hotel Georgia which is also worth a look. The signature cocktail of the hotel of the same name in downtown Vancouver, it first appeared in print in 1951 but is believed to have been created sometime in the 1940s.

The main difference is the use of egg white, which gives a wonderfully smooth and silky texture. It’s a little heavier on the orgeat syrup, and the orange flower water is definitely worth sourcing as it amplifies the drink to new heights.

Ingredients
• 60ml London Dry gin
• 15ml freshly squeezed lemon juice
• 15ml orgeat syrup
• 10 drops orange flower water
• 1 egg white
• lemon twist to garnish

Method
Add all ingredients into a cocktail shaker. Shake without ice. Open the shaker and add plenty of ice. Shake again until chilled. Double strain into a chilled martini glass or coupe. Squeeze the zest over the glass to express the oils from the skin over the surface of drink.
